Apricot Nectar Salad


1 package (4 serving size) sugar free lemon flavored gelatin
1 can (12 ounces) apricot nectar
1/3 cup cold water
1 tablespoon fresh lemon juice
1 can (11 ounces) mandarin orange sections (packed in water), drained
3/4 cup seedless green grapes cut in half
1/2 cup diced unpeeled apple
Sliced apples, small grape clusters, or mandarin orange sections


Place the gelatin in a medium bowl. In a small saucepan, bring the apricot nectar to a boil. Stir the nectar into the gelatin. Stir until the gelatin is dissolved.
Stir in the water and lemon juice. Chill in the refrigerator about 1 1/2 hours or until partially set (the consistency of unbeaten egg whites).
Gently stir in the oranges, grapes, and diced apple. Lightly coat a 4-cup (1-L) mold with nonstick spray, then transfer the gelatin mixture to the mold. Cover and chill about 3 hours or until firm. To serve, unmold the salad onto a serving platter or plate. If desired, garnish with the additional fruit.
