Tarragon Turkey Dijon


2 T 1% low-fat cottage cheese
1 tsp Dijon mustard
½ tsp tarragon
1 lg romaine lettuce leaf
2 slices multigrain bread
2 oz thinly sliced turkey
Salt and pepper
4 thin strips bell pepper


In a small bowl blend cottage cheese, mustard and tarragon.  Place lettuce leaf on one slice of bread and spread mixture over lettuce. Place turkey on top and lightly season with salt and pepper. Top with bell pepper strips and remaining bread.
