Rancher's Omelet

This hearty no-nonsense breakfast is full of lean protein and veggies.

Prep Time: 15 mniutes


oilve oil cooking spary
1/4 c red pepper
1/4 c onion
1/4 c tomato
1 tsp minced garlic
1 c egg whites
2 eggs
pinch salt
pinch pepper
2 oz light havarti cheese
1/4 c salsa


Cook turkey sausage and dice it. Pre-heat a non-stick pan and coat lightly with spray. Add peppers and onion. Saute till onions are lightly browned. Add cooked sausage, tomato and garlic and continue to saute for another minute. Remove from pan and set aside. Whisk egg whites, eggs, salt and pepper together. Respray pan if necessary and add egg mixture. Cook ubtil it begins to bubble and the bottom is golden brown. Flip and cook until the other side is golden brown. Remove from pan and transfer to a plate. Place the havarti cheese on one half of the omelet and the sausage and vegetable mixyure on top of the cheese. Fold the omelet over to cover the mixture. Top with salsa.
