Apple Phyllo Crisp


3 sheets phyllo dough
1 T plus 1 oz walnut or almond oil
3 Granny Smith apples peeled and cored
½ tsp cinnamon
2 T honey
1 vanilla bean
1 T vanilla extract
½ c plain, non fat yogurt


 Phyllo Squares
 Preheat oven to 425°.  Spread out phyllo dough one at a time. Brush with oil. Top with second sheet and repeat. Top with final sheet and finish with oil.  Cut phyllo into four inch squares and place on baking sheet lined with parchment paper. Bake 4-6 minutes or until top is golden. Turn over squares and bake for additional 2 minutes.

Vanilla Oil
 Cut bean in half lengthwise, scrape the beans out of the husk. Place in saucepan with 1 oz of oil, heat until hot- not boiling.

Cut into quarter inch slices. Sauté with cinnamon until caramelized ( golden and soft). Add honey and mix, remove from heat and keep warm.

Vanilla yogurt
 Wisk together vanilla extract and yogurt- until creamy.

To serve:
Place a phyllo square in the center of the plate. Top with three to four tablespoons of sautéed apples and one tablespoon of yogurt. Top with another phyllo sheet, apples and yogurt. Drizzle infused oil on top Dust with sugar.
