Apple Crepes

Ingredients

2 Granny Smith apples, peeled and cored
½ tsp cinnamon
Pinch nutmeg
Pinch cloves
½ c orange juice
1 low-fat granola bar crumbled
1 tsp icing sugar

CREPES:
2 eggs
2/3 c fat-free milk
2 tsp canola oil
2/3 c wheat flour
 

Directions:

Apples
Cut apples into thin wedges. Saute over medium heat until golden brown. Add OJ and bring to a boil, reduce juice until it absorbs into the apples.

Crepes
 In a bowl wish together eggs, milk, oil and flour. Heat a pan over medium heat. Pour 1 oz of the batter into the pan. Swirl the pan around so batter is no more than 1/8 inch thick. Cook until bubbles appear- like pancakes. Flip when underside is a golden brown and cook for another minute.

To serve:
Top crepe with sautéed apples, roll into a cigar shape and top with granola and sugar.
